Valentine’s Special: L.O.V.E cheesecake!

We’re spreading the foodie love this Valentine’s Day!
Surprise your loved one with this beautiful homemade cheesecake.
Ingredients:
- 200g digestive biscuits
- 100g butter
- 200g cream cheese
- 40g icing sugar
- 1 vanilla sugar
- 2 tbsp lemon juice
- 150 ml cream
- 1 cup blueberries
Supplies:
- Ovenproof dish (If you have a heart shape one- even better!!)
- Saucepan
- 2 mixing bowls
Method:
- Preheat oven to 180 degrees.
- Crush the digestives into crumbs with a blender or roll over them with an empty bottle.
- Heat the butter in a saucepan . Add the biscuit crumbs with the butter and mix together.
- Press the mix into the ovenproof dish with a spoon and place in the oven for 10 minutes.
- In another mixing bowl, mix in the cream cheese, icing sugar, vanilla sugar and lemon juice. Finally, add the cream and stir until smooth.
- Remove the ovenproof dish from the oven after the 10 minutes. Spread the cheesecake mixture smoothly over. Cool the cheesecake in the fridge for about 3 hours.
- Decorate the cheesecake with blueberries before serving.
Tip:
Make it even better with an extra layer! In Step 6, spread in a layer of mixed red berries before the cheesecake mixture!
