Pancake Day: Top Toppings & Recipes

    Keeping things traditional with lemon and sugar? Or do you prefer to get creative with toppings and textures, drips and drizzles? Whatever you enjoy the most, March 1st allows us to have fun with the whole family to celebrate Pancake Day.   

     From the thick and fluffy to thin and crispy, we’ve been flipping through some of our favourite pancake recipes to bring you some fresh inspiration.

    The sweet & fluffy ones: Buttermilk Pancakes and Honey Roasted Figs

    Sticky, sweet and soon-to-be a firm favourite for a decadent brunch or dessert, these fluffy buttermilk pancakes bring creamy Greek yoghurt together with fruity figs and a lovely crunch from the nutty pistachio sauce.

    The veggie ones: Goat’s Cheese and Caramelised Onion ‘Chic Pea’ Pancake

     For a light, savoury option, these chickpea pancakes are a great lunch or brunch idea. Pile high with goat’s cheese, red onion and tomatoes for a flavour-packed twist on the traditional.

    The easy-peasy ones: 3 Ingredient Pancakes

    Want to keep it simple this year? These fuss-free banana pancakes are a joy to make and a joy to eat, too. Top with whatever you like; we’ve chosen blueberries and more bananas to continue the fruity theme, but they’d be delicious with mixed berries, nuts and seeds. Here’s how to make them: 

    • 2-3 ripe bananas
    • 2 eggs
    • Blueberries
    • Maple Syrup
    • Butter, for frying

     

    • Whisk together 2-3 (200g) mashed ripe bananas with 2 eggs to make a batter.
    • Stir in 25g blueberries, saving 25g to serve.
    • Gently fry 3 tbsp of batter in hot butter for 30 secs – 1 min each side.
    • Stack up the pancakes and top with blueberries, half a sliced banana and maple syrup

    The fancy ones: Buttery Honeyed Cinnamon Pears and Crispy Bacon with Pancakes and Toasted Almonds

    Go all out with the unbeatable flavour combo of maple and bacon. Indulgently sweet and savoury, top these pancakes with toasted almonds and take the fanciest of at-home brunches to the next level.
