    In season for July: Aubergine

    July is here and summer’s well and truly underway. This month, we’re spotlighting the purple-hued (sometimes white and green!) deliciously versatile aubergine. Perhaps best known for hearty moussakas or warming ratatouille, there’s so much flavour to enjoy from this vegetable, and we’ve got some delicious HelloFresh aubergine recipes to try at home.

    Store them

    Aubergines are best stored in the fridge, ideally in the crisper drawer to help them stay fresh for your next tasty meal. You can also freeze them to use another time, just make sure you slice and then grill them before freezing so they don’t lose their texture and go mushy!

    Cook them

    Whether it’s a family feast or dinner for two this summer, try the Red Lentil and Spinach Dal with Roasted Aubergine and Basmati Rice for a delicious way to use aubergine. Or, for a wonderful combination of lentils, cheese and vibrant pesto, the Roasted Veg and Lentil Jumble with Greek Style Salad Cheese and Pesto is a great addition to weeknight dinner options. If you’re after a speedy and tasty tea, the Roasted Pepper and Aubergine Linguine with Pine Nuts and Chives brings rich, nutty flavours together. The aubergine is roasted first, and then added to the delicious tomato sauce before serving.
