In season for April: Spinach
Along with springtime showers and spots of sunshine, April brings the vibrantly green and beautifully versatile spinach into season. Whether you like it fresh and crisp in a salad, whizzed in a smoothie or wilted into a delicious curry, there are so many ways to celebrate this leafy green.
We’ve got some great handy hints and inspiration so you can discover ways to make spinach shine this month.
Get the best out of your spinach by storing it in the fridge. If you have any leaves you’ve not used, try wrapping them in a paper towel and storing inside a container in the fridge – this will help absorb any excess water. Freezing is another great way to store this ingredient – and you can then use it again in soups, curries and pasta dishes, or even in a tasty green smoothie.
Spinach wilts very quickly, and is often added right at the very end of a recipe as a result, like in our Spinach and Chickpea Moroccan Style Stew with Baharat and Couscous or the delicious Red Lentil and Spinach Dal with Roasted Aubergine and Basmati Rice.
