Where do we source our steaks from?

All of our premium Steak Night dishes use high-quality cuts of sirloin steak that have been sourced from our trusted beef supplier in Ireland. To ensure optimum flavour, all of our steaks are grass-fed and aged for 21 days. Dry ageing is a process where the beef is hung or placed on a rack to dry for several weeks. The two key effects of dry ageing are the concentration and saturation of the natural flavour, as well as the tenderisation of the meat texture.

Our chefs have performed culinary magic with their homemade Bernaise butter, made with fried shallots, garlic, parsley and tarragon. The butter, with its herbs, brightens other flavours in this dish and pairs perfectly with the rich flavour of the tender sirloin.
