Isn’t quinoa getting so popular? It’s pretty insane. But what I love about it, is that it’s so versatile. You can eat it in one of our delicious salads with sumac and halloumi, or with a beef stew, or as a lovely porridge with coconut milk. Coconut milk is lactose-free and the coconut is a crazy fruit. In Sri Lanka, they use coconut in so many aspects of their cooking; coconut oil for frying and cooking, coconut milk in curries, grated coconuts mixed in with their rice and rice flour staples. And… those Sri Lankans stay young for a long time. My mum looks more likeΒ my sister than my mother and I think it’s all about the coconut. Seriously… get on it – with this quinoa breakfast recipe with coconut milk!

quinoa porridge with coconut milk, pistachio and clementines

quinoa porridge with coconut milk, pistachio and clementines

Ingredients

  • 2 cups quinoa
  • 2 cups water
  • 2 cups coconut milk
  • 2 tbsp honey
  • 1 clementine, peeled and sliced
  • 1 handful pistachio, deshelled

Instructions

  1. Place your quinoa and water in a pot and bring to the boil, cook for 10-15 minutes until the quinoa is soft. Drain the water away completely
  2. Heat the coconut milk and honey in a pot
  3. Spoon the quinoa into two bowls and pour the coconut milk on top
  4. add the clementine slices and pistachio
