The Inspiration Behind Chef Andre’s Premium Recipes February 27, 2018
Give dinner times an upgrade with our delicious premium recipes…
At HelloFresh, we know that adding a little bit of variety to your recipe repertoire can really bring the joy back to home cooking. When you’ve got meals to look forward to, and when eating in feels like a treat, the “what’s for dinner” debate quickly becomes a thing of the past.
Whether you’re gluten or dairy free, vegetarian or catering for fussy eaters, we’ve got recipes to suit every preference and a box to fit every lifestyle. And for those evenings when you fancy something a little bit, well, fancy, we’ve even got a weekly premium recipe to bring a little bit of low-key luxury to your dinner table.
We caught up with Chef Andre (below) to talk us through what exactly makes our Premium recipes so special….
So Andre, what makes premium recipes different from our normal recipes?
Our premium recipes include high-value proteins like whole duck breast, sirloin steak or salmon fillets, making them the perfect choice for special occasions, or the evenings when you’ve got a little bit more time on your hands.
The flavours are slightly more complex and we’ve tried to incorporate seasonal ingredients you might shy away from like mushrooms, artichokes and baby root vegetables. Yesterday afternoon I was creating a new premium recipe using fennel and today Lizzie is re-testing a recipe with heritage tomatoes – it’s all go in the HelloFresh kitchen. You’ll also find that the sauces are more indulgent (French and Italian cuisines have been a big influence), and that the sides have a slightly more ‘cheffy’ appearance (but they’re just as simple to cook).
Does ‘premium’ mean they’re harder to cook?
No, not at all – they should accessible but aspirational. Although there might be a couple more things to prep, they’re easy to achieve in a sensible time frame and shouldn’t take you more than 40 minutes to cook.
What’s been the biggest inspiration for creating these recipes?
We really wanted to up the ante in terms of the style, recreating restaurant quality food for the home cook. Having said that, there are obvious shortcuts in the recipes – for example, a red wine jus in a top restaurant takes two days to make whereas a red wine jus with HelloFresh takes just 20 minutes. These recipes will prove that you don’t have to be a Michelin starred chef to create show-stopping dishes.
And are they suitable for kids?
For more adventurous children, yes. The flavours in our premium recipes are slightly more complex but like all of our recipes, there are always opportunities to leave out certain ingredients. For example, if you know your kids won’t touch spicy foods, just add the seasoning in at the end once you’ve plated up their portions.
Upcoming Premium Recipes:
This brilliant recipe (shown in the video above) will prove that cooking duck isn’t something that only happens in fancy restaurants. Bursting with fresh, zingy flavours and on the table in 35 minutes, this is the perfect recipe to add a little bit of no-fuss luxury to your mid-week menu. Quacking stuff.
If you’ve never tried black garlic before, you’re in for a treat with this deliciously simple (but luxurious) recipe. It’s got plenty of weird and wonderful uses – from black garlic ice cream to infused vodka – we’ve seen it all… It’s even delicious eaten on its own like sweets! But tonight, we’re using it in a sauce for flaky, oven-baked salmon alongside steam fried veggies and roasted new potatoes.
The Italian word saltimbocca loosely translates as ‘jump in the mouth’. Tender chicken and savoury sage wrapped in serrano ham is a classic flavour combination that will make your taste buds jump for joy. Served alongside a creamy porcini risotto enriched with butter and cheese, this is dinnertime dining at its best.
Chorizo is the perfect partner for seafood. In this beautiful dish, the paprika-infused oil mingles with sweet tomato and fragrant basil to make a piquant salsa for pearly-white sea bass fillets. Golden saffron brings a touch of luxury to creamy mashed potato. Add some fresh, green sugar snap peas and you’ve got a plateful that’s as lovely to look at as it is to eat!
