Passion Fruit & Cashew Breakfast Pots

    The days are getting brighter and brighter and there is a little bit more of a spring in everyone’s step. So getting up a bit earlier and making a delightful pot of passion fruit, cashew and yoghurt to start the day is definitely possible. But if you still want to hit the snooze button, I get it. That snooze button can be a life saver…  but don’t worry, you can make these and pop them in the fridge overnight!

    Passion Fruit & Cashew Breakfast Pots

    Ingredients

    • 1 mango
    • 2 passion fruit
    • 40 g cashew nuts
    • 300 ml curd or full fat quark ( plain yoghurt works too!)
    • 2 tablespoons honey

    Instructions:

    1. Heat a frying pan and roast the cashew nuts (without oil) until they’re golden
    2. Scoop the passion fruit pulp out of the shells
    3. Mix yoghurt/curd/quark with honey
    4. Start layering: layer 1 – half of passion fruit, layer 2- half of the yoghurt, layer 3 – half of mango & half cashew nuts, layer 4 – half of yoghurt, layer 5 – rest of passion fruit, mango and cashews
