    The wide range of ice cream flavours makes it a versatile dessert for any occasion. While it’s easy to buy ice cream from the supermarket, making homemade ice cream is actually simpler than you think.

    How to make ice cream at home

    Recipe Development Manager, Mimi Morley, shares all the information you need to make your own ice cream easily, with or without an ice cream maker. 

    How to use an ice cream maker

    Using an ice cream maker is one of the easiest ways to make homemade ice cream, and ensures your dessert has a smooth and creamy consistency. When using an ice cream maker, make sure to keep the canister in the freezer for at least a day before making the ice cream. 

    Gently heat a mixture of 280 ml of double cream, 300 ml of milk, 115g of sugar and three eggs, and pour it into the machine with any flavourings you want to include. Allow the mixture to churn for around 30 minutes, and then allow it to freeze for a further three hours (or until it reaches your desired consistency).

    How to make ice cream without an ice cream maker

    When making ice cream by hand, follow the same instructions to heat the mixture of double cream, milk, sugar, eggs and flavouring, as above. Place the mixture into a container and leave to freeze for 3-4 hours, stirring occasionally. While you may not get as smooth a consistency as you would with a machine, you’ll still have an easy, tasty treat to enjoy.

    How to make vegan ice cream

    There are countless recipes for making vegan-friendly ice cream, that use milk substitutes and taste very similar to regular ice cream. When making vegan ice cream, we recommend using 800g of coconut milk, 175g of caster sugar and two tbsp of cornflour, plus any flavourings.

    You can also make vegan ‘nice cream’, a healthy banana-based alternative that replaces your standard ice cream base with blended frozen bananas.

    Ice cream flavours you have to try

    While you may enjoy classic ice cream flavours, there are many different combinations to consider. Try adding stronger flavours, such as coffee or cinnamon, to your creations, or take a unique approach by pairing sweet and savoury flavours together – for example, adding chilli to chocolate ice cream.
