I’m cooking for friends in a month so this post is perfect timing for me. 🙂 Not sure of numbers yet but about 4-8 people. My first choice is the Roasted Chicken with Pancetta and Herbed Lentils as I’ve cooked it before so I’ll be more confident. Two or three are vegetarians and comfortable with the rest of us eating meat.

Can you suggest an alternative to the chicken and pancetta for them? I was wondering about Halloumi but thought it would be a bit plain if I just grilled some or popped it in the oven, even with some thyme to mirror the chicken. Especially as we meat-eaters will have the pop of the pancetta as well.

If there’s not a straightforward alternative, I’ll probably go for the Greek Ragu with Almond, Aubergine and Basil Couscous. But I’m not so confident as I haven’t cooked it before and also seem to have variable results with aubergine: sometimes bitter.
