Springtime Citrus Salad Dressing with Grapefruit April 10, 2017

Give your salad some serious sass with this delicious citrus salad dressing with Grapefruit. Sure, it’s easy enough to jazz up a  lunch-time salad by chucking in some avocado or cherry tomatoes but when it comes to the dressing, most of us will just drizzle over a little olive oil or go without all together.

Once you’ve tried this delicious grapefruit dressing – and seen how easy it is to prep – you’ll wonder how you ever chewed your way through those dry leaves! Fresh and zesty, this grapefruit salad dressing is the perfect thing to transform a simple salad into a springtime showstopper – making it a great side to enjoy with a BBQ (yes, we’ve already dusted ours off…).

Grapefruits are bursting with goodness and are packed with Vitamin C and A. Grapefruit juice also promotes clear, healthy skin, and can help to lower our risk for many diseases and health problems and has been linked with aiding weight loss as part of a healthy and varied diet.

Feta and Pumpkin Seed Salad with Grapefruit Salad Dressing


Bag of baby leaf salad

Feta cheese

Pumpkin seeds

1 grapefruit, peeled and segmented



1/2 grapefruit, juice of

6 tbsp Olive oil

1 tbsp White wine vinegar

Salt and pepper


  1. Cut grapefruit in half with a sharp knife
  2. Squeeze the juice of the grapefruit into a jar
  3. Add the white wine vinegar and olive oil. Season with salt and pepper
  4. Shake jar well and drizzle over salad

I love a good lemon dressing but never get the time to make it! However, I’m tempted to try this grapefruit one… even though I don’t like eating grapefruit. It’s always been too sour for me but I feel it would be nice just dispersed throughout the salad and helping on the acidity side. Who know, I might become a convert.
