I read somewhere that there is a gene that 70% of us carry, that means that we just don’t like the taste of brussel sprouts. I’m more than a little bit dubious about this… it sounds like a bit of a made up fact. Next thing you know there will be a new gene that causes us all to dislike coriander… “The devil’s herb” as some people call it.

At HelloFresh, we love a bit of greenery and I am pretty sure that over 30% of the world’s population will adore this brussel sprout and gorgonzola salad. It’s also a really easy lunch recipe, if you want something quick that requires minimal cooking and lots of vitamins!

brussel sprout gorgonzola salad

brussel sprout gorgonzola salad


2 tbsp minced red onion
1 1/2 tbsp virgin olive oil
2 tsp English mustard
1 tsp honey
1 handful fresh thyme, extremely finely chopped
2 tbsp Gorgonzola, sliced
2 tsp balsamic vinegar
1 garlic clove, diced
1 handful roasted pecans, roughly chopped
1 pinch ground pepper
1/8 tsp salt
240g brussels sprouts, very thinly sliced


  1. Combine everything in one salad bowl and toss!
