Autumn Pumpkin recipes
October 18, 2014The rain, the chill and the scarves are coming out as the we are slowly diving into Autumn season. It is the perfect time to stay at home and start sprinkling spices, read cinnamon , on pretty much everything.
Around this time in America, the pumpkin season starts and it is incredible! Pumpkins are pretty much the theme for most desserts but rather than just showing you a pumpkin pie, I want to show you how versatile pumpkin is. So, here are our favourite Autumn pumpkin recipes.
Pumpkin soup is warm, comforting and lets you know that Autumn is officially here. Although it is made with tumeric in the above recipe, the beauty of this soup is the fact you are able to tweak the flavourings and spices to your taste. I personally like to add a bit of warmth with cinnamon and then a bit of spice with fresh chillies before blending…..also a good handful of homemade croutons on top.
If you really want to be fancy then you can serve it in hollowed out pumpkins.
These cookies are easy to make with pumpkin puree and you can always add any type of small chocolate on top. Alternatively you can leave it as it is without pressing the centre and dip half in chocolate for a different look. Whichever way you do this, I can confirm that they will be devoured quickly.
Fettucine usually paired with a gamey meat because most of us know what a good combination that is. But this, this recipe has really changed my mind. It is so flavoursome, silky and smooth….if you really can’t get away from meat, you can always add pancetta.
What to do with the seeds? Most of us tend to discard the seeds as we see no use for them however keep hold of them. After around 10-15 minutes in the oven, pumpkin seeds transform into a healthy snack.
Happy Weekend!
