Aubergines, the often overlooked vegetable, is a great vegetable that is full of vitamins/minerals and dietary fibre. It is the go to ingredient for those transitional months when we need more antioxidant for the body, then aubergines are your best friend. So here are our favourite aubergine recipes:
Versatile, nutritious and low in fat? Yes please!
For those that aren’t fond of aubergines too much, then they need to try this. Aubergines on pizza is so simple, not too overpowering and a good way to introduce aubergines to the masses. Use thin slices so that it slowly melts when the pizza is cooking, or alternatively you can grill it first if you have more time.
This is a great for parties as it is easy to do, eat and doesn’t create a mess in the house. But also because it is easy to make, it means you can make big batches of this finger food easily. Season, put in oven and voila!
Unless you are a fast cook, I would leave this for the weekend as there is some amount of cooking and stuffing involved. However the best thing about this dish is you can prepare it all beforehand meaning you have more time for wine.
