7 Healthy Soup Recipes For Autumn

    Oh soup, glorious soup! When it’s raining outside and you’ve got a big bowl of steamy soup in front of you, life is good. Here are our top healthy soups for this Autumn to keep you fit, healthy and well-fuelled.

    1. Cold Busting Mexican SoupHealthy soup for colds

    This recipe calls for only one or two tortillas, which means you will have quite a few leftover! We hate waste so are always thinking of ways to use leftover ingredients. One suggestion is to make oven baked tortilla crisps (healthier than deep fried but still delicious!). You can brush them with oil and then make them savoury with a sprinkling of salt and some paprika or sweet with cinnamon and sugar. A few minutes in a hot oven and voila!

    2. Coconut Caribbean Soup

    Poudre de Columbo is a Caribbean curry powder from our wonderful spice suppliers ‘Seasoned Pioneers’. It smells pretty damn good and cooked with creamy coconut milk, veggies and crispy tortilla chips on the side, it tastes pretty damn good too! Get stuck in!

    3. A Slightly Surreal Singapore Laksa

    Sometimes life throws bizarre situations at us. Patrick experienced this in Singapore airport recently when he was sitting in the food hall and suddenly saw himself on the television. Turns out his Italian cooking show had made it over to the Far East and it wasn’t long before the staff in the restaurant were piling his plate high with all sorts of local deliciousness*. One of the six main courses (!) was a mouthwatering Singapore Laksa – practically a national dish. This one’s for the team at Singapore airport! *In hindsight, probably not the wisest decision before enduring a 12 hour flight back to London.

    4. Veggie-tastic Italian Soup with Crispy Bacon

    As we move deeper into winter, we’re big fans of snuggling indoors with a hearty bowl of veggie-tastic soup. Whilst everyone else is sniffling their way through the cold, we like to ward off any nasties with wholesome veggies. Did you know that every different coloured vegetable represents a different phytonutrient? This hearty bowl of soup contains green beans, red tomatoes, orange carrots, brown onions and white leeks. BOOM!

    5. Spiced Moroccan Lentil and Chickpea Soup

    They say you can lead a camel to water but you can’t make him drink. We’re pretty sure if you led him to this steaming bowl of Moroccan soup, you wouldn’t have a problem! This recipe is inspired by Head Chef Patrick’s recent trip to the Atlas Mountains where he spent time with the nomadic Berbers. Check out the video of his adventure on our blog!

    6. Carrot, Pancetta and Lentil Soup

In Italy when you come to the bottom of your bowl it’s common to “fare la scarpetta” which (randomly) means “do the shoe”. It’s the action of wiping your plate, though fortunately we’ve provided you with some fresh foccacia rather than an old shoe!

    7. Italian Polpetti SoupPolpetti soup recipe

    As far back as 1897, Pellegrino Artusi, author of La Scienza in Cucina e L’Arte di Mangiar Bene, (The Science of Cooking and the Art of Eating Well), included three recipes for ‘polpetti’. In Tuscany they were a favourite of housewives who frugally made them using scraps of meat and bread to feed their hungry families. We are of course referring to the (not so humble) meatball. Here we’ve jazzed up the recipe with Parmesan and a kick of chilli to tickle your tastebuds.
