    3. The Savoury: Mushroom & Spinach Porridge

    • Spinach, a handful
    • 1 tbsp Chives, chopped
    • Peanuts for garnish

    Method:

    1. Make your porridge base using the recipe above. When making savoury porridge, we recommend using vegetable stock instead of milk (the same quantity applies). Add the oats and veg stock, a pinch of salt and pepper to a medium saucepan on a low heat, cook (like you would normal porridge), stirring occasionally to the desired consistency. We suggest a ‘not so loose’ consistency for a savoury porridge so there is a good texture to the dish.
    2. Meanwhile, heat a frying pan with a drizzle of oil (or knob of butter) on medium heat, once hot add the halved mushrooms and fry until they have good colour, and have released their moisture, about 5 mins.
    3. Before serving, stir through the spinach so it wilts, and top with sauteed mushrooms, chives and peanuts.
