Whilst we’re all huge fans of a classic hummus, this grey weather has had us craving bright, colourful foods which led us to create these four deliciously different dips.
Chickpeas – the hero ingredient in hummus – are high in fibre and protein, and contain more than ten micronutrients, making hummus a healthy and nutritious snack. Serve it with warmed pitta or crunchy veggies for dipping, this crowd-pleasing dip never fails to go down a treat.
Roasted Beetroot Hummus
Ingredients:
- 1 small roasted beetroot
- 400g chickpeas, drained
- zest and juice of a lemon
- 2 large garlic cloves
- 2 tbsp tahini
- salt and pepper
Method:
- Blend 1 small roasted beetroot in a food processor until smooth.
- Add 400g chickpeas, zest and juice of one large lemon, 2 large garlic cloves, 2 tbsp tahini, and a pinch of salt and pepper.
- Blend while slowly drizzling in 60ml extra virgin olive oil.
Harrisa Carrot Hummus
Ingredients:
- 300g carrots, cooked
- 400g chickpeas, drained
- juice of a lemon
- 2 large garlic cloves
- 3 tbsp tahini
- 3 tbsp harissa paste
- salt and pepper
Method:
- Blend 400g drained chickpeas, 300g cooked carrots, 2 tbsp lemon juice, 2 garlic cloves, 3 tbsp tahini, 3 tbsp harissa paste, 1/2 tsp salt and pepper
- Add 60ml extra virgin olive oil while you’re processing the rest.
Golden Turmeric Hummus
Ingredients:
- 400g chickpeas, drained
- zest and juice of a lemon
- 1 large garlic cloves, minced
- 2 tbsp tahini
- 1 1/2 tsp turmeric
- 1 tsp paprika
- 1/2 tsp sesame oil
- salt and pepper
Method:
- Blend 400g drained chickpeas, 2 tbsp tahini, 1.5 tsp turmeric, juice of half a large lemon, 2 tsp minced garlic, 1 tsp paprika, 1/2 tsp sesame oil
- Add 60ml extra virgin olive oil, and a pinch of salt and pepper while you’re blending
Glorious Green Pea Hummus
Ingredients:
- 400g chickpeas, drained
- 1 large garlic cloves
- 2 tbsp tahini
- 1 cup green peas
- 3 tbsp extra virgin olive oil
- salt and pepper
Method:
- Blend 400g chickpeas, 2 tbsp tahini, 1 cup green peas, 2 cloves garlic
- 3 tbsp extra virgin olive oil, and a pinch of salt and pepper.
